The processing time has been reduced to a minimum to avoid a prolonged exposure to air and other factors that could impair the organoleptic properties and the flavor. The grinding is carried out within twelve hours after the harvest in a cold facility at temperatures below 24°C.
The result of this procedure is an extra virgin olive oil of high quality and the most diversified flavor profile with a level of acerbity not exceeding 0,2ma and especially a taste that is very close to the freshly harvested fruit.
