The estate is located in Puglia, where warm and dry summers alternate with rainy and humid winters and therefore the region provides a perfect climatic balance for the cultivation of olives.

We have twentytwo acres of olive groves in the countryside of Castellaneta in the heart of the Parco delle Gravine, a system of natural canyons and cave villages which have an incisive impact on climate action. The climate is characterized by a thermal inversion and therefore promotes a microclimate which is ideal for the production of agricultural goods of high value.

The habitat and microclimate are particularly favorable to the cultivation of coratina, frantoio and peranzana varieties which provide our extra virgin olive oil with a peculiar balance of odors and flavors. This is Donna Bice, a precious and sophisticated oil, pure Italian love.

How we produce
Donna Bice is the result of a detailed planning of the single stages of production, including advanced technologies and methods that respect nature as for example the use of pure and desalinated water, natural pest control and the harvest by hand.

The processing time has been reduced to a minimum to avoid a prolonged exposure to air and other factors that could impair the organoleptic properties and the flavor. The grinding is carried out within twelve hours after the harvest in a cold facility at temperatures below 24°C.

The result of this procedure is an extra virgin olive oil of high quality and the most diversified flavor profile with a level of acerbity not exceeding 0,2ma and especially a taste that is very close to the freshly harvested fruit.
